Founded in 1988 by Eli Ben Zaken, this is regarded as the first modern winery in the now extremely popular Judean Hills wine region. The winery is named after an ancient ruined castle that overlooks the high-altitude vineyards. These lie at 750 metres above sea level, allowing the grapes and wines to retain freshness. This is a tank-fermented blend of Sauvignon Blanc, Chardonnay and Gewrztraminer. Perfumed, very aromatic, floral notes, dry with crisp acidity; hints of lychee and mandarin; well made, refreshing and characterful.
