In the 1960s, Jean Paul Mett used to help his neighbour produce eaux de vie. This started his passion and motivated him to learn the craft and later, he opened his own distillery. Keeping to traditional methods, Jean Paul Mett first produced classical eaux de vie like mirabelle plum and raspberry. He quickly expanded the range by introducing unique eaux de vie like flowers, berries and truffle. He took his godson Philippe Traber under his wing in the mid-1980s and passed on his passion, knowledge and secrets and who eventually took over on Jean Pauls retirement in 1997. The distillery is located in Ribeauville and is managed by Philippe and Nathalie Traber. Tasting Notes: Quince is thoroughly packed with vibrant, exciting flavours. Eau-de-vie should carry through the flavours of the fruit used in their production. The nose of the spirit should be instantly recognisable and the palate should carry a distinct yet possibly light flavour of the fruit. A high quality eau-de-vie should have a delicate finish with a pleasant burn. Fruit and some times herbs and spices, are picked when they are at the peak of ripeness with the fullest flavours. These products then undergo one of two processes to extract their flavours.
