From the very good 1961 vintage, I have been warned on several occasions to stay away from the slippery slope known as Grand Cru Burgundy. Tonight I slide further down the hill. I had never tasted a mature Richebourg before tonight. This producer is very old school which was fine with me. An ah-so removed the cork without incident. The color of the wine was ruby with only a slight amount of bricking at the rim. The nose was captivating from the start with mushrooms, damp earth, and a slight anise smell. Nice acidity and the typical earthiness you would expect was present on the palate. After about 30 minutes, a sweetness of fruit lingered in your mouth as the finish lasted a good 45-60 seconds. This is definitely a food wine and it paired absolutely beautifully with dry aged squab. In fact, this may have been the best pairing I have ever had with mature Burgundy (even better than duck). It took me over 15 years to achieve my Burgundy epiphany. I definitely should have listened to my many mentors and stayed far away from this devilish region.
